This chicken pie is a winner every time. If you have cooked chicken in the freezer, all you need to do is boil some potatoes and make the sauce. I have put frozen peas in, but, as with all of my recipes choose what suits your family. Frozen sweetcorn or chopped green beans will do just fine.
| Serves: 2 adults and 2 children | Prep Time: 15 mins | Cooking Time: 25 minutes |
|---|
| 300 | grams | potatoes | |
|---|---|---|---|
| 25 | grams | margarine or butter | |
| 25 | grams | plain flour | |
| 3/4 | pint | milk | |
| 195 | grams | cooked chicken | |
| 75 | grams | frozen peas defrosted | |
| cheese grated |
- Peel the potatoes and chop into chunks.
- Boil for 10-12 minutes until soft. Drain and leave in the pan without the lid on. This will allow any excess water to evaporate.
- Meanwhile place the margaine, flour and milk in a pan.
- Gently heat the pan, when the margarine has melted stir the sauce, keep stirring until it thickens.
- Let the sauce boil for 2 minutes, while continuing to stir. This boiling process, cooks the flour and avoids the sauce tasting of the flour.
- Mix the chicken and peas into the sauce.
- Mash the potatoes.
- Pour the sauce into a casserole dish and top with the mashed potato.
